Take chicken out of brine Dry chicken Coat in flour mixture above Put on wire rack to dry for 20 min. Coat in egg wash (3 egg whites) Coat with flour mixture again Put on wire rack to dry for 20 min. Cover chicken with excess flour

Once breading is set.
Fry at 350 - 375 until golden brown
