If the earth is flat then why isn't the change from night to day instant?

You would think that if the earth was essentially a piece of cardboard floating around, when it flips away from the sun it would be like a light switch

You would either have full noon sun or pitch black midnight

I'm sure there's some weird explanation they have that doesn't make sense to justify this. "Oh the earth doesn't spin,sun varies in intensity. It just turns off at night!"

Nobody thinks this. Flat earth isn't floating around anything. It is all that exists or possibly exists alongside other magnetic fields on a flat plane. "outer space" is something completely different than what jewish institutions teach.

The Sun is a lot smaller and a lot closer than jewish institutions teach. Daytime is a combination of sunlight and ionized gasses. There are times you can see both night and day at the same time.

Here's a video explaining it. Note that nowhere in this video is it claimed that the earth is a floating pancake.
