The "change for a $10 bill" trick is confusing enough that it works on people not good at accounting in social situations.
Ask if person has a $10 bill for 10 ones. Give them 9 ones for their 10, but tell them to count to make sure. Correct your 'mistake' by giving them another one. Then immediately put the $10 bill they gave you in exchange down on the ones and say "It would be perfect if you have a $20 bill for the change", pointing at the ones and the ten.
If they hand you the $20 bill in exchange for the ten and ten ones, you just scammed them out of $10.
