This is kooky cargo cult superstition.
Flour is used in other things like cake, tortillas with no yeast at all, it does not make you sick. All pizza dough is is flour water and yeast. Same exact thing as bread.
All pizza dough is fermented too. Different preparations take a different amount of time to ferment. If you use slow acting yeast in the refigerator yes it takes 12 hours. But fast acting at warm temp goes in an hour or so. All the yeast does is eat some of the starch and turns it into gas and alcohol. Then it dies in cooking.
It is not magic.
