I make many variations of this. I also make breakfast versions with egg, sausage or bacon. Throw in some tater tots. I use leftover taco stuff and make these. Its good if you need a change. I always brush on the beaten egg and then put shredded cheese all over it and let it melt then flip it and start adding your ingredients! It take a little practice to get it folded right but once you figure it out it gets easy. Everyone around me loves it. @DukeofRaul
