A good starting point is any series by Dr Michael Mosley, his documentaries are focused on biology, medicine and nutrition, so as a former Medical practitioner and scientist he discusses metabolic function gain relating to diet. His keto one was debunked, but largely he is on course, unlike that guy who made the carnivore diet that got found out to be a fraud who doesn't even follow his own "diet" anymore because he got gravely ill from eating a 100% meat diet. Humans are absolute omnivores, because of our evolution and varied diets, we are one of the few species that can't synthesizes Vitamin C because we eat everything and can get that vitamin plentifully from multiple sources.
The simple answer is eat everything in moderation and cut out processed goyslop, we are not meant to be eating fried foods and confectionery.
