Meaning that if all people adopted that diet we'd all have to quit our currently productive jobs and all work full time making neo-food just for neo-food to have the man hours that it would need to feed everyone.

The other / over lapping thing that can consume $280 pounds is the opportunity cost in physical resources it takes to produce all of that. So if it doesn't consume all labor it would be more resource intensive and be less green. It would also siphon off resources needed by other processes. So either we end up too time poor for our markets to do anything else or we end up too resource poor for our markets to do anything else, or both (since time and resources have some convertibility).
