Although the other guy is mostly correct, methods do exist, and involve careful selection of hardware + software + a good knowledge of what you are doing with the software.

For example, with computers, you need to find hardware where the processor has been fully fuzzed, the boot chain is fully open source (e.g. the coreboot/libreboot guys), and you need to run a very tight, cut down distro where you rarely, if ever, update any software.

Explaining why would take a long time, but basically hardware backdoors originally lied in the processor undocumented 'debugging' functions (BTW Intel is made in Israel). This can be defeated with secure kernels that prevent the sending of odd opcodes, so then the workaround for the jews was to place the whole system behind a hypervisor (first software, later hardware via the trusted computing module, which was originally discrete, but later integrated into processor silicon). This turned out to be intractible if the hypervisor can never be loaded, so the latest attacks involved having your system pre-backdoored at the boot process, and with encrypted boot firmware, and with various defenses that make it where your system won't boot if you try to delete or clear the malicious boot firmware or replace it with open-source firmware. Thus, you have to run old hardware, where you understand your hardware's limitations, and you mate it to secure software that you never touch or update once you get it working.

With cell phones, the same situation exists: jews want something encrypted on your device that you are prevented from touching where the backdoors exist. In the cell phone, this is in the baseband engine, which is a separate coprocessor that sits between the processor and the antennas, is fully undocumented, and is fully encrypted. On every modern phone, it is integrated with on the processor's silicon, has access to the phone's memory and hardware, and can function when the CPU is powered down (just as the IME/PSP can for computers). It has been proven in tests that the BBE can spoof your network (when it connects to a 'stingray'/'interceptor' or other fake cell tower) and can force software to install silently. The only modern phones with a divorced BBE is the Librem phones or ESD's cryptophone.

High-tech cops will get lazy: (When not targeted directly,) why bother going through the pains of capturing a pigeon or deciphering an innocent-looking letter of mr.X when you can press a button and get a whole dump of data on mr.Y and mrs.Z in a split second and have a looksee if they can be pinned as "terrorists"?

Leave your phone "clean enough" so you look like an average Joe, that just went to a wrong corner of the Internet, or at the very least sieg-heils with a beer in his other hand every 3rd Sunday = appear as a less worthy target.
If they come for you, they WILL get you - if they won't find anything, they will place sth of their own and work in hand with media to make the public go along with their narrative ("oy vey, he had 100GB of cp on his disk, for real", etc.), anyway.

We're at the point where your job is to stay away from the spotlight and pray/keep-fingers-crossed that it's not your turn. That and raise a lot of good, tightly-knit kids so they can take care of you and each other when the shit hits the fan (i.e. have your own doctor, lawyer, farmer, house-builder, banker etc. in your family, either as your own kid or married-in to them). You can only count on your own, after all.

Use something like Eraser to delete all the "deleted" info on your phone. On nearly every system, a file isn't actually deleted; it just replaces one or more of the first few characters of a file name with something like "?". This signals to the drive that everything from that point on the end of the file is free to be overwritten, but given the size of drives - even on a phone - it may be weeks or months before that space is overwritten so much that nothing useful of the original file can be extracted. This works the same on your computer, tablet, laptop, etc.

Programs like Eraser will find these "erased files" and actually overwrite every bit randomly with 1's or 0's, or simply all 1's or all 0's, or through some other method, permanently destroying the file right then and there. Once this happens, there's nothing to be extracted except garbage - it's gone forever. No spy tech can reverse this, regardless of what conspiracy theorists mumble on about.

As for the stuff on your phone that isn't erased - well, that can still be accessed and there's nothing you can do about it. However, programs do exist which detect unauthorized intrusion and immediately act to format the entire drive (really, a card, the principle is the same). Your information will be gone forever very quickly, and it's difficult to detect in time to stop it (e.g., by powering down the phone). However, in every country in the West, booby trapping your phone like this is actually illegal, and you can be charged with a crime for doing so (e.g., "interfering with a police investigation", "destroying evidence"). So even though 99% of the time you CAN stop law enforcement from getting useful information from your phone, you can still be charged with the crime of, well, stopping law enforcement from getting useful information from your phone. You just have to weigh which set of crimes would be worse.

Although honestly, most phones can be remotely accessed quite easily. Most people allow this all the time with their apps (apps which access for access to pics, movies, chat logs, the camera, the mic, etc. etc.). It doesn't take a hack, all it takes is someone to want an app badly enough they don't give a shit who roots through their phone for personal data. And that would be damn near everyone in the world. No fancy equipment needed, only human stupidity.

You should also note that the vast majority of phones are never truly "off", no matter what anyone claims. They go into a very deep 'sleep' mode instead, and can still be pinged, and their location still be found. Never, ever take your cell phone with you anywhere you don't want people to know you're going, unless you're actually able to pull the battery out. Which you can't, with most modern phones. "Off" isn't actually off, and the "no gps" option doesn't really work.
