You can dry and powder the leaves to make file powder for soups and gumbo.

If it were still extant in my region, I probably would, despite warnings of safrole being carcinogenic (I mean, what isn't these days?)
I think the last time I saw traditional root beer for sale was '85-ish.

There were over 120 Root beer companies in 1910 in USA and 50 years later they all had to go out of business / sell out / or swap to chemicals.

Fun fact : in blind taste tests pure rootbeer extract tastes identical to fake root beer flavor. Identical.

One is cancerous though.

Root beer was trivial to make for over 150 years and needed no added carbon dioxide. You put water, yeast, cheap junk dark sugar (or molasses), sassafras shavings, into a wooden barrel, tightly cork, then on a cold day months later carefully pour off the top 4/5ths of self carbonated drink into bottles through a filter funnel and cap or cork.

The last 1/5th has too much bitter yeast sludge, but you can drink that on your own farm by drafting off another half on a cold day after it settles.

Yeast make dangerous organic unwanted byproducts too, so you dont want to make habit out of eating your own vegemite/marmite/etc sludge.

I've cultivated wild yeasts from flower blossoms and fruits, before.
I wonder if the same could be done with sassafras root.
I mean, if it can be done with ginger, then why not?

Interesting, but laborious.

Mongolian desert peoples for thousands of years, when seeking yeast (black bean starter for hoisen sauce, etc) use human piss!

YEAST IS TAKEN from initial burst of male human urine to collect yeast from inside urethra.

Written in thousand year old ancient texts, but they did not know the magic of this piss was from yeast.

You also can use piss, and avoid cultivating wild yeasts from flower blossoms and fruits.

For exotic classic sourdough you will need to steal heirloom starter or get lucky.

more than 50 species of lactic acid bacteria (mostly Lactobacillus spp.) and more than 20 species of yeast in official bakers sourdough starters :

I love authentic Hoisen sauce descended from chinese piss, and I love authentic San Francisco heirloom sourdough bread descended from flour and potato and lucky fermentation over 130 years ago.

TL/DR: Just piss if you need a tiny amount of yeast that loves to live in humans. If you want yeasts that do not love to live in humans, you can find yeast in lots of places.

You could totally pay shipping, handling and a small fee to get a sassafras sapling mailed to you. Saplings are all I'm able to find anymore, The roots of fully grown trees smell fantastic. They make a great mantelpiece

Though if you're using okra in your gumbo (which ya should be), you can get away without it.
