For the short term, I have begun to can. I’ve started with beef pot roast, and will soon do some carnitas, (pork roast, or, “little meats”)
Just for the protein factor, I only care to do meat stuffs for now. I’m not so sure about the effort/reward factor on veggies yet. Grains I figure I have a hold on.
The main idea for the pot roast stuff is the ability to have a quick meal after a long day. Also, some for reserve. Any thoughts?
what about drying then vacuum sealing meat? not sure if that would work. However I would recommend looking at how they preserved meat before the fridge came along.
I wasn't certain of the answers to your questions, so I looked it up and learned some interesting things.
I'd always wondered why infants aren't supposed to eat honey and then I'd never remember to look it up. Evidently, botulism is at least one reason why as it can colonize their gut and poison them from within.
Secondly, I learned that there is a condition called "wound botulism" that occurs primarily in junkies when the spores enter an injection site. Gross!
Anyway, in response to your inquiries:
Isn’t Botulism one of the most often fatal illnesses?
Botulism is fatal in 5 to 10% of people who are affected. However, if left untreated, botulism is fatal in 40 to 50% of cases. The mortality rate for wound botulism is about 10%.[citation needed]

Isn’t the bacteria is pretty much worldwide in the soil?
Evidently, it's pretty widespread. I'd be surprised if it wasn't everywhere.

I only knew about babies getting botulism from honey because I’m about to help my wife birth our first born soon. We quiz each other about baby facts to be better prepared.
Apparently the bacteria responsible for it is often in our bodies but the bacterial load is never enough to foothold like you mentioned. Im so glad I don’t eat dirt cookies.
I’m about to help my wife birth our first born soon.
Congratulations, man! That's great news!
You won't regret doing it yourself, though you may want to consider having a midwife around for the event. Experience can often count in the moment and, if they've been around long enough, chances are they've seen some things.
For my part, the Mrs. and I have had all kinds of experiences with our children (hospital/home, bed/water birth/other, assisted/unassisted, etc.) and the best by far have been at home with the assistance of one or more midwives.
In any event, the very best of luck to you, my friend.
Based on the quality of your contributions around here, I can't help but think you and Mrs. Her0n bringing children into the world will make it a better place.

Thank you! We are going to the midwifery for this one. The plan is to tub birth, but we have backups if she doesn’t like that. This place is really great and right next to a hospital if a problem does arise though we doubt there will be any issues. We are also doing the hypnobabies hypnosis method, I’ll do anything to avoid drugs and this is what she picked. It’s good stuff to be honest.
I’m going to be there for everything, but I’m not sure if I can watch the breaching. I see plenty of gory, nasty stuff to regular operations with no issue, but this is my wife and I’m worried it’ll trigger my overactive “protect her” mentality. It switches my fear center off and pumps my anger to the max. It’s never gotten past me saying asinine shit but that would take her right out the hypnosis and I do t want to do that to her.
I’ll do anything to avoid drugs and this is what she picked.
Bless her for choosing what is best for her and the baby. Mrs. Fascinus birthed all of ours without drugs. It can be done.
I’m going to be there for everything, but I’m not sure if I can watch the breaching.
Couple of things here. Your wife is going to need you the most during transition, which is right before the big show.
Everyone is different and my wife needs to concentrate on the pain and "go inward" during the hardest contractions. On ore than one occasion, I've had to shoot a glance at a chatty friend who couldn't contain herself in the moment or otherwise hold the space to make sure the Mrs. could do what she needed to do.
As for crowning, it's kind of magical. I only know me, so I can't say what's best for you and I wouldn't miss it.
I’m worried it’ll trigger my overactive “protect her” mentality.
Protect her from what, though? I get what you're saying and what she's doing is natural, beautiful and sacred. In my experience, it doesn't feel like that. There is no adversary to overcome.
I guess I’m overthinking it maybe?
First time father? What else can you do? You can think about it as much as you like and nothing prepares you for the event; you are transformed in the moment.
*Edit: Just thought to add, the fact that you are thinking about it this much in the first place is enough to know that you care enough to put your best into this. Rest assured, you'll do fine.
Not only that, I have been able to render otherwise inedible food into amazing dishes with the addition of pressure. One example that springs to mind is the time my oldest found an enormousSulphur Shelf. We took about 2/3rds of it and it was a good 40lbs.
Ordinarily, when they get that big, they're too woody to be edible. Being an experienced cook, I knew exactly what to do with it. Hours in the pressure cooker later and the formerly inedible mushrooms cut, chewed and tasted like steak.
We ate off of that single find for about a week. Even shared some with the in-laws, who were duly impressed.
We've used Instant Pots since they became available and have used them so much that we've worn one out. Since was have a large family, it's not uncommon for us to run 2 at a time.
They're great for preparing medicinals too. For example, Blackberry Root is great for diarrhea, but the traditional method of boiling the roots takes all day. 20 minutes in the pressure cooker and I had a tea that stopped them up like a cork.

I’m going to have to formally request that you share your knowledge with me. We have one pressure cooker and our first baby due in November. I’m building up my Homestead and trying to diversify as I proceed. I’m going to grow mushrooms and that will greatly help if one of my crops ever fails or something happens to my livestock. Even though I have multiple source books stating the same facts about mushrooms my wife is extremely paranoid that she’s going to have something bad happened to her because “Mushrooms bad“. When I harvested the peaches from the tree in the backyard she took 20 minutes before she was willing to take a bite. After she bit into the peach, quickly devoured it and declared “more!“. Apparently those were the best peaches she’s had in her life.
We’ve been slowly increasing our usage of raw materials to cook the proper way. We’ve already seen a drastic increase in our general well-being.
I’m going to look at recipes to see how you make a mushroom taste like steak.

We would totally be friends IRL. I'm into that too, only I haven't been able to scale up the operation the way I'd like to, due to lack of space.

I totally hear that. I grew up pretty much my entire life hearing things like "don't touch that", "don't eat that!", etc.
Turns out that an incredible variety of plants, fungi, etc. all around us are not only edible, in many cases they also posses valuable medicinal properties.
With many years of experience in foraging, I find food pretty much everywhere I go. It ain't necessarily great, or enough to feed a family and it's something.
That being said, I've also found amazing things that are either impossible to find in a store or prohibitively expen$ive for a family man like me. One example that comes to mind are Matsutakes. The smell is simply intoxicating. Anyone who has found them will know what I mean. Like a Dryad's pussy :)

I look up everything and cross check the info with other sources. Then I’ll look up the different effects on the body. I’ve been making nettle teas and stuff like that because “waste not, want not.” and why not try it out once? It was ok tasting but it did settle my stomach after I had food poisoning.
Mushrooms I’ve only really used for hallucinogenic fun, but I know they do so much more. I do grow some so I can microdose. I’ve also been using my marigold seeds for the same purpose, both are pretty good in the right dosages. I only trip for special events, usually it’s all micro doses that don’t lead to any tripping.
Nettle is great for dudes. Increases testosterone. I tincture it with pine pollen for max gains and for putting an exclamation point on it with the Mrs.
You sound a lot like me in many ways.
I'll have to look into Marigold. Thanks for the tip!
