This was a pot roast recipe that I followed using tri-tip. Turned out pretty good. The only thing I don’t like about canning with the cold pack method is that all of the fat is retained. Gonna be getting myself a pressure cooker when I build my new house out here. No room in my current 100 yr old house. I have canned extensively using the boiling/high acid recipes. Looking forward to canning some venison. Axis to be precise.
