My doctor is generally unreachable and looking things up on the internet has become entirely bogged down with copy + paste articles that are word-for-word the same shit.
I don't eat unhealthily but I don't really pay that much attention to what I eat either. I don't really want to hear from people who grow all their own vegetables and shit on anyone who still participates in society... I'm not really that rich and I'm at where I'm at. I would love to head north and grab a plot of land and grow all my own vegetables but I'm just not there yet.
I work out but not intensely, enough to know I'm working out but not enough to really make myself overly fit... Which is fine, I just quit smoking and drinking this past year and decided I'll really tackle my health next year... Which is now.
I was incapable of gaining weight while I was smoking but that's since changed which is honestly nice cause sometimes I didn't look that great.
This is what I have: I inherited celiac disease from my mother, bless her soul and I've known about it my whole life... So I don't eat bread or anything and I don't really fuck with gluten free bread cause it's fucking dogshit. I don't really care much for sugar but I do seem to have an addiction of sorts to potatoes. Baked, scalloped, mashed, roasted... I don't really care how they're cooked I'll eat them... Wherein lies the problem...
Whenever I eat any carbs now... Not like cola, I don't drink pop but potatoes, rice.. Anything like that I get really tired... I mean, really tired - fall asleep tired. A while back I tried a keto diet but was working at a slaughterhouse skinning + boning 300 hogs/day and felt that no matter how much I ate I was dangerously low on energy and lost weight that I didn't have to lose. So...
It's gotten bad. Heartburn after any meal, always tired after eating... The fuck is a regular human supposed to eat that doesn't make them feel like shit? The internet is a fucking retard-circus if you even hint at typing anything about what to eat... I'm not in my 20's anymore.
I'm thinking that I eliminate carbs after breakfast, start the day with a bowl of oatmeal or something with some fruit? I'm not in such a high-energy workplace anymore so I don't think I need to worry as much about wearing myself out. Reduce coffee and only drink it after breakfast but before lunch. What the fuck do people eat for lunch? A can of sardines? I haven't had lunch in years. I just eat breakfast and dinner usually.

Take a break and eat at least 50 carbs a day for 5 days every 2 months to maintain proper blood production.
Yep, get rid of carbs. As few as possible, cut from as many sources as possible. My mom lost 100 pounds that way.

My mother was celiac, and both my (adult) children are as well. Also two of my sister's kids. I avoid gluten, but if I eat a bit of bread or whatever, my symptoms are mild, usually a bit of bloating and my feet swell a bit and get tingly for a couple hours.
I also eat my morning oatmeal, and otherwise I live on meat, eggs, cheese, fruits and veggies. Try subbing sweet potatoes for white spuds. Fewer carbs. White rice has a very high glycemic index score, not much less than pure glucose. Brown rice is a bit better, but not much. Quit the starch and learn to like broccoli, carrots, etc. I add a heaping teaspoon of coconut oil to my oatmeal. I eat a lot of butter and animal fat. Fat is fuel. Fat will not make you fat. You could try some salami and cheese slices for lunch so you're not a starving animal when you pull up to the dinner table.
getting sleepy after carbs is definitly a sgin that a doctor would tell you you have diabeetus. you might be able to circumvent the effect by eating the potatoes together with veggies, so your digestion works slower.

fat content of my diet is high enough as it is, if i eat one and a half pounds of regular cheese in one sitting, like i do with the fatreduced version, id have a much less healthy protein to fat relation.. u know? also regular cheese is often times just too slimy to enjoy. i am a cheese connaiseur out of germany though, so get lost with your american pseudocheese bullcrap.
my favourite cheese is "tome de savoy. it has a thick crust of fungus, that tastes just like boletuses.
another great favourite of mine is camembert thats made of goats milk and has a black fungus growing on it, rather than white like a usual camembert.
but both these cheeses cost upward of 40 Euros per Kilogram, so its a rare treat at best...
aside from harzerKäse, i enjoy using a cheap fat reduced mozzarella which has 8.5%fat and 20.5% protein. one and a half pounds of that, with 150 grams of fatreduced bacon, and a pound of root-vegetables is a nice evening meal also.

Getting older brings heartburn and indigestion. Always drink enough water and start adding more acid to your diet. Drink a couple ounces of apple cider vinegar with lemon juice and a little water to take the bite out.
Taking heartburn medicine just makes things worse.
Drink coffee plus coconut oil in the AM. Kickstarts your ketogenic cycle. This is how I eat whatever the fuck I want and remain within 15 lbs of HS graduation weight at 40.
Sounds like you need to regrow your gut biome. Apple cider vinegar and honey before every meal, and probiotics once a day. Over time you may find you can eat all kinds of thing that used to challenge your stomach. I full on became tolerant of lactose again doing this. Between that and the bio hacking I feel and look ten years younger.
Remove bread from your diet. Along this line all grains are not good. This includes oatmeal.
Potatoes are fine, but go with baked, steamed, or mashed. You shouldn't fry them with vegetable oil, but olive oil doesn't oxidize nearly as much (deep frying is a big no no).
Avoid seeds and nuts.
Meets are good, eggs are good, vegetables are good if they're fully cooked or fermented (pickles).
Avoid high levels of sugar. Replace sugary foods with fats. In this line you should also be avoiding fruits to an extent.
Do not take in large quantities of dairy. Bit of butter is fine, but don't slurp down a load of milk.
On top of all of this take metamusal or some other fiber. Don't take a lot of it as you already have a very sensitive gut, but the fiber will help clean out the gut and provide hydration.

Include on that if you have a stomach issue throughout the day. You should be able to corralate any specific food to stomach issue after a couple of months.
Also track cravings. If you have a craving for a food you may be low on something. Look into what's in that food you want and if it's something that you may be low on. I generally get a craving for cheese, it turns out that I'm generally low on vit D.
You already know about keto, that you're celiac and shouldn't be having grains and carbs. It sounds like you're addicted to them yet wonder why you feel like shit.
On one line you say you can't get enough potatoes and the other that you're miserably tired. If you're consuming potatoes at every meal is it a mystery why you're tired?

You tried keto but it sounds like you weren't doing it correctly. Did you have "My Fitness Pal" installed and were you tracking your intake? Were you getting enough macros AND micros? From a guestimating standpoint, were you filling up on vegetables and eating some meat?
Have you tried a strict veg/meat diet, ruling out ALL starch/carbs? What happened?
