The easiest way to debunk the "hurr durr, the volleyball scene is gay/homoerotic" nonsense, is just to analyze how the scene was shot.
If you were going to film that scene for homoerotic appeal, you would likely have a lot of lingering closeups on the actors' chests, asses etc. The camera work would accentuate the bodies of the actors, but it doesn't. Instead, most of the shots are either very tight shots of the actors' faces and shoulders, or wide angle shots showing the flow of the game. Tom Cruise repeatedly checking his watch while making a face that looks like he's constipated, surely doesn't help the whole "homoerotic" argument.
There's not a single shot of the actors' asses, and none of them are wearing the really faggy short shorts like the extra in the background of one scene is wearing.
There's nothing homoerotic about the scene itself. Of course faggots are going to get worked up over 3 buff shirtless dudes, the same way straight guys might sport some semi-chubs if it were bikini beach volleyball with hot chicks instead.
The scene exists for 3 reasons, none of which is about faggots.
1. It shows the rivalry and competition between Maverick and Iceman continues when they aren't flying.
2. It adds a bit of tension to the friendship between Mav and Goose, as Mav eventually chooses ho's over bros, and goes to get laid by Charlie instead of staying with Goose to play another game. (which also shoots down the whole "derp, the volleyball is gay" thing)
3. It gives the ladies who were dragged into the movie by their boyfriends/husbands something to enjoy for a few minutes before airplanes.
It's unimportant. The original Top Gun movie was awesome for it's cliched, terrible plot and dialog in a "so bad it's good" way. However, I thought the volleyball scene and the locker room scenes were gay as hell.
