The bugs (crickets/grasshopper) are $29.99 per pound in this part of California (diggernicks bait), while cow is substantially less at $5.59. The odor of dead crickets and grasshoppers is horrifying too, so no one is buying them as the cheap alternative.
I can't explain why anyone is buying them to eat in the first place, but they (mexicans) are.
I think the idea is they can be made much cheaper with economies of scale. At least in regards to price. There's still the whole cultural humiliation part of it.
