Basically, they might take something like "fake meat" and want to make it popular, so they use bots/fake social media accounts to make it "trend" and viola...it looks like "fake meat" is popular.
Here's the real bitch of it though...it's not actually popular, but a sad percentage of the population perceive that it's popular, and because they want to go along with the group they go along with it too. There's another percentage of the population that just can't believe how many people are going along with it, but again...it's not true. People just don't perceive that right now, but they're starting to.
