Im looking at products such as the Big Berkey gravity fed system to use for my family if SHTF. I would be using my rain barrel as a source. I have plenty of the life straws and such- I want something that is cost effective theoretically over thousands of gallons…
Any recommendations for an easy system to effectively evaporate/condense/collect saltwater?

For short-term use you want a ceramic filter that you can backflush to clear it. You might or might not want an activated charcoal filter; with a good ceramic filter, if you're out in the middle of nowhere and the rain tastes okay you may not need one. You can build your own activated charcoal filter, either using aquarium charcoal or it's possible to use regular charcoal. (Do NOT use charcoal briquets or you'll have a bad time. You want natural charcoal.)
For long-term use, look into how to build a slow-sand filter.

Distilling sea water is about the only reasonable method but it takes a lot of energy, whether it’s burning wood or harnessing the sun. In a pinch you can dig hole several feet from the shoreline, the water that seeps in can be drinkable but not very tasty.
I have the Berkey light which is just the same filters with polycarbonate reservoirs. Much cheaper than the stainless steel , though I'd rather have the stainless. Stock up on filters. !!!! Also, I have 5-6 Berkey sports bottle /w filters
Keep it simple and just distill the water. Purchase a "home distiller" from Amazon and if necessary use a fire in your backyard to boil the water. Purchase or make a rocket stove as well to make this easier / burn less wood.
And if you're worried about the lack of minerals (personally I think this is not an issue) then put a pinch of himalayan salt or squeeze some lemon into the water before drinking it.
