I thought photographs like that could only be imaged with radio telescopes. There's no way an optical telescope could see that.

Optical telescopes that take pictures like that use long exposures with light filters. You expose reds, greens, blues, all separate. You do this because the sensor is a single-color sensor. This way you can have more pixel density, less noise, and more light sensitivity than a color sensor.

You also take multiple exposure with the same filter. For example 100 reds, 100 greens, 100 blues. The reason for multiple exposures is to reduce noise. This is called image stacking.

In the end you combine all the stacked and filtered images to produce the final colored image.

So it's possible, it just takes a lot of work and dedication.
