By my estimates if we want to successfully match the numbers we'll need 658 ovens. We'll have to keep them burning around the clock but we should be able to make 5 pizzas per day per oven. In 5 years that should get us to our goal of 6 million pizzas.

Today's pizza ovens are more efficient than those old Polish models, so maybe we could get away a few less than 658, but just in case we encounter a demand for more pizzas, we should stick with your number.

My estimate was actually based off modern oven technology while also factoring in potential down time that may be caused by maintenance or other unforeseen circumstances. It's really poor management to assume your ovens are going to run at peak efficiency 100% of the time.

My estimate included 2 to 3 hours of daily downtime. I think that is enough.

Daily? Is there a cooling system on these modern ovens to speed up the process? I thought they run at like 1488 degrees. That would take hours to cool off on the natch without assistance.
