Glad to see so many people here enjoy cooking their own food, especially meat. What do you think about chicken fried steak?

I've always loved it but never learned how to cook it. My wife made it for me a couple of times, but inexplicably used cornmeal with the breading. It was ... okay. I asked her not to use cornmeal again, but the next time, damn if she didn't do it again. I just asked her how it was done and made my own next time and showed her how it's done correctly. She just shook her head and said "That's not how I was taught to do it." I replied "But this is now EVERYONE ELSE makes it! And if you can't make it correctly, don't make it for me at all!" And so that's how it was. She never made it again because she always insisted on using cornmeal (which I despise, by the way), but at least I learned how to pound cheap steak meat and make really kick-ass chicken fried steak.

Chicken fried steak is a kind of schnitzel. Probably finds its finest form in Texas thanks to all the German and Czech immigrants. I use venison cutlets (tenderized) as well as beef cutlets. It is one of my favorite meals, period. You have to make a good gravy to go with it. Use a lot of black pepper to season the gravy. It is best with mashed potatoes, with the meat and taters drenched in gravy. God it is good!!

Pepper is the key. If you don't use a ton, its just fucking flour goop.

If I’m being honest, it’s White trash feed from Denny's. Now, in all fairness, your wife is retarded. Use a blend of flour and cornstarch. Cornstarch gets crispy but doesn’t have the proteins for browning that wheat flour has, so you blend the two, 50/50 for the best results.

For exact mixture ratios, do some research. Most tempura cooks very quickly compared to a piece of beef. You may want a ratio different than 50/50. My wife is a bit retarded in the kitchen too. Not entirely, she does a lot of good stuff, but some things she does make no sense. For instance, I can’t get her to use the correct knives for things, no matter what.

the idea of cornmeal crust on chicken fried steak is disgusting. my recommendations : whip your egg whites and then mix into your batter mixture if you're doing the lazy, or do the 3 part (floor egg breadcrumb). don't buy what you see in stores, those cuts of meat are usually scraps that are meat glued together. do use a tenderizer, either a needle punch or you can do pineapple or papaya extract to tenderize. high temp on beef fat to cook, finish in oven on a rack. in the pan make the gravy using beef fat and butter to form the roux. I use some stock and milk and lots of fresh ground tellicherry. you can add a bit of cornstarch for more crispy.

that's really up to you, what you want the outcome to be, and how much effort you want to put into it. if you find cheap sirloin that's a good one. I'd skip any real steaks (NY and Ribeye) and roasts like a chuck roast. if you tenderize it, esp. mechanically and then enzymatically it won't matter much since it'll be partially broken down. start with whatever price point you want and go from there.

Honestly, I enjoy it.

However, there's plenty of other things I prefer before it. One thing I've been craving lately is steak fingers. That with some tots and white gravy... Hell yeah.

You don’t have to pound the steak if you leave it in a milk/egg wash for a couple hours (even better up to 4 hours).

You gonna use that anyway for the crumbs/seasoning to stick.

If you like to cook (I do), get the book How to cook Everything. Fantastic book, that is more like a textbook for food not a cookbook. It does have recipes but it is so full of useful shit..what cut come from where, shelf lifes, etc. My introduction to cooking. Shit, I bet that book is 20 years old by now.

I have numerous cookbooks, some from my mom which were her wedding presents, and an oddity called "The Flavor Bible", which is an encyclopedia of what meats, vegetables, spices, and other flavorings go with others. It's very abstract, but it an excellent reference and good for inspiration.

I'll look into that book. It sounds really amazing. Thanks!

I see an ebook version of How to Cook Everything, which I'll download to evaluate, but everyone knows you can't cook a recipe on a phone or a tablet. I'll need to get a paper copy of that. The best cookbooks in a kitchen are dogeared, tabbed, and bookmarked.

You could be right but if so it would be a Pyrrhic victory. In her case, I know it was just laziness. For decades, I always resented that she never made any effort remember what food or meals I like and never made the effort to make them. I always do so with her, even though I found her tastes a bit weird. We still had meals together, but it was usually what she wanted or how she liked it. Being a stronk wammin only goes so far.

I don't know that life. I was living vicariously through her for a moment. If he doesn't like what I make he will go out and get something to eat and I refuse to spend any more money on food than I have to because I want other things.

I won't presume to second-guess your family life, so I offer no unsolicited advice or observations. I respect intact families and couples who try to live a more-or-less "traditional" live. I have a different understanding of that because I was born in the 50s and have a different perspective from "kids these days". When I was growing up, it was very unusual for a wife to have a job and they took their job at home seriously, generally.

Speaking for myself, I didn't make it a point that I was the sole provider, I just assumed my wife would figure it out for herself eventually, but after 30 years, I actually had to say it explicitly (this was years after the kids had moved away) that I had more value in the household because I brought in more the three times more income that she did. He couldn't believe I said such a thing, but I asked her whether she could could keep everything paid for on just her income.

Now, I NEVER brought it up until then. I was extremely undemanding of her all of our life together. I always wanted mutual respect for our different roles, but she saw that very differently.

I'm sorry for bringing this up, but my marriage has been difficult because I always gave and got nothing back. It was only in the last 10 years or so that I stiffened my spine and said so. The marital roles may be different, but respect has to work both ways.

Sorry for the wall of text. I have a lot of stuff I still need to work through.
