Damn I'm eating good

For lunch today I had pulled pork from my smoker over rice with a side of spicy beans that I infused with smoke on my smoker

The pork I dry brine with rub and smoked until 165 at which point I put it in a foil container with butter and brown sugar then put back in until the final temp. I mixed the drippings from the pan into the pork. Topped it with Carolina mustard style spicy bbq sauce.

Damn that shit was good. Usually I don't worry about calories because I bust my ass at work but today was is a slow day I might need to actually exercise when i get off.

Holy fuck that was the best lunch I've had in a while.

There was no reason to besides a little salt in this case. The pork and mustard based sauce had a lot of flavor. Making elaborate rice would have ruined it

Smokey beans sounds awesome! Pulled pork with Carolina mustard bbq is always a winner. Carolina mustard is also great dressing for coleslaw, nice tang for the cabbage. Damn I just have store bought chicken Caesar wrap and bologna-cream cheese rolls. Day off work, coasterin’ all day ha!

Got any links to the sauce? I have yet to find a good one but I love mustard. I usually go with a vinegar, salt, red pepper, and sugar sauce with my pulled pork
