7 day wet brine experiment

Really not happy with the packer brisket itself. Decided to go for a 10lber and it had the same volume of fat to trim off as a bigger one. I'll just go big or go home from now on. Only 12lb+ usda primes

I member when brisket was considered a garbage cut (lol) because most people didn't know how to prepare it and it was cheap as hell. Ah, the god old days.

The upside is that I can nab a slab of ny steak for cheaper per pound than brisket. At least at my local grocer. It's really weird. It's like people don't understand portions or something.

I smoked some thin steaks. Dont think I got them up to temperature after two hours but ate them anyway.

Well I hope it's going to be good despite how the raw brisket looked. I can tell you 2 hours in the bark is looking pretty nice
