I know it's spelled cafe au lait (with milk), but I like your version better somehow. And you're right about the neighborhood. The wife and I used to go there for extremely hot cafe au lait and beignets decades ago, and it was already a bit sketchy then. Being the French Quarter and all, I can't imagine how it must be now. I did enjoy getting powdered sugar on my fingers and clothes because it was part of the experience.

I’ve never thought of the French as sausage makers. Maybe sausage takers. I’ve never had boudin.

It's not really strictly sausage. It's hot rice mixed with ground meat and a few veggies. Really good stuff

I've had it and really liked it. Fun fact: the French word for sausage "Boudin" is the (supposed) origin for the English word 'pudding'. As in Blood (Black) Pudding, Christmas Pudding, etc. Of course the word became associated with something entirely different in America to the product we are more familiar with today.

I enjoyed it when I lived in New Orleans decades ago. I thought it was amazing. I haven't had it since then because I can't find any place that has it.

Thanks. I've seen this site, but unfortunately, unless one is buying in large quantities, the shipping is unaffordable. The boudin was only $7 a pound, but the lowest price to ship it is $43.

The high cost is due to overnight shipping with a freeze-pack. Well understandable. Maybe I can get it special ordered where I live.

To be fair to the Cajuns, they were some of the nicest, friendliest people I'd ever met. An all White community, some of whom still spoke French. I worked with a woman who invited me and the wife to a crawfish boil at her home, where I met her father. He said he didn't speak English until he was eight years old. He grew up on the bayou, where he helped his dad catch garfish, sometimes called alligator gar because of their long slender jaws with sharp teeth. The fuckers are dangerous and can rip the flesh from a man's arm in seconds. They would catch them with a pole and a noose and someone to grab them to bring into the boat. I just had to admire that. Tough people.

Sounds like good memories and your granddad was a good man. In New Orleans (Gretna, actually), I loved being able to go to a local shop and buy a couple of pounds of berled mud bugs. I was taught to eat them with the formula "pinch the tail, suck the head". I didn't drink then, but common consensus said they're best enjoyed with Dixie beer. I got really spoiled by the easy and wide availability of shrimp and crawfish.

The lady whose house I went to in Breaux Bridge asked if we wanted to go to a fais do-do outside of town, have some alligator tail, and watch Zach Richard. I'd never heard of him but I was familiar with zydeco, so we said yes immediately. One of the best nights we ever spent there.

Could explain what your granddad meant about "non-swimming democrats"? Was that a reference to Ted Kennedy?

Split the case and pan fry the insides into a rice and meat “hash brown” with eggs is my preferred way to eat it. Smoked/grilled is fine too. Crawfish étouffée is far superior for any meal if available though.

I did business with Cajuns for years and always found them forthright. They would tell you exactly what they thought, which I liked. They are White Christian people. A great many of them look like they came from Scandinavia.
