If that was a requirement when chic fil a signed the lease they probably wouldn't have opened there to begin with and this wouldn't be a story.
Considering the closed Sunday is part of their religion, the state may not be able to discriminate against leasing to a company based on their religious practices. The law might quickly get thrown out for chic fil a anyway, or they'll just not renew their lease with the state.

They will do anything they can to put independents out of business.

The whole point of a restaurant in a highway service area is to provide food to travelers. If the highway were closed on Sundays, there would be no problem.
Seems odd that there were no provisions in the arrangement for hours and days of operation.
