Heat some water in a glass or bowl in the microwave, dump out the water and then cover the butter that needs softening for a few seconds with the upside-down glass/bowl. Makes butter soft enough to spread without melting it. I use this all the time in the winter when the butter that gets left out is too cold to spread.
