In France there are restaurants which only open for dinner in the evening, also canteens and small food delivery businesses which only open for a few hours at mealtimes, and they're all the more profitable for not screwing around while nobody's buying.

Exactly.in tiny towns there used to maybe three - four places to eat breakfast lunch and closed for dinner. I think a return to that would be nice. Money spread around a bit, different options and everyone's home for dinner.

Everyone complains about wanting convenience but it's because of convenience that has them working 12 hour days. They don't see the connection between the two.
