Part of our functions while living cause electron flow. When an electron is knocked away from its valence orbit it will burn energy to return to a stable orbit. When this energy is used, light it emitted.

It is. Electrons get transfered through natural processes that would only take place while the organism is alive. When electrons use energy to return to a stable orbit they emit the energy spent as light. This is the fundamental principle on how the lights we power work.

Still could be the "soul" but the soul as understood as an electrical gathering, which when contained in a biological vessel, performs the functions of a living entity. Sounds like some chemical reactions give off very faint visible light. Ultrasonic cavitation in water does this, for example. It's not hard to believe that some things give off a few photons, just very faint. It would be an interesting diagnostic technique if it could yield health information.
The body would emit black body radiation (long-wave infrared) regardless of the source of the heating.
Their "discovery" seems like those reports of toxic chemicals being found in everything, except that it's because our equipment is so sensitive these days that it can detect extremely small concentrations. In this case they're using essentially a photo multiplier (EMCCD) that looks like it can detect single photons.
