See Alice in the end has an IOU and if someone hacks the exchange (which happens all the time and is sometimes an inside job), then she's screwed. Bitcoin is safe. Exchanges are not. Not your keys, not your coins. As soon as she transfers her bitcoin to the exchanges address, they are holding it not her. IF someone hacks their computer systems, they gain control of those private keys and can send that bitcoin to their own addresses.
