Also, as a lower escalation solution: Paint. Throw paint over their windscreen/cameras and even if they want to keep going they'll have to stick their heads out.
I saw a video from (I think) Argentina a while back where they painted a riot police APC's windscreen. They tried to keep driving and crashed. The crew/squad had to bail out and run for it before they were overrun by the crowd.
At that point all we’d need is pointy sticks to finish them off.

Vietnam is all I feel I need to bring up. It was so bad for the US that we took to trying to melt the rainforest and we still lost miserably to a people three or four eras behind us at the time. They had no idea how to operate captured vehicles, some of us today know how and have driven the very tanks and helicopters that they’d use against us.
What’s a military to do when they can’t get to a resistance group without leveling their own cities they ‘swore’ to protect? They lose, because they’ll lose all support as soon as they raze the city.
While I agree, the ramshackle guerilla nature of the vietcong is overstated. They were heavily supplied by the chinese, who had soviet equipment, who had a whole bunch of german scientists working for them. Certainly they were able to do a lot with very little, but they weren't exactly mcgyvering the whole war.
