It’s a grease interceptor. All of the drains from a commercial kitchen go to a grease interceptor where the grease settles out. In the US you have to pay a company to bring out a vacuum truck and suck all the solids out, typically a couple times a year. I guess I’d be grateful if I owned that kitchen that I never had to pump down my interceptor.

Problem is that everything in the kitchen goes through the interceptor, including floor drains. So every time somebody mops the floor that shit is going into the interceptor. Even though grease is supposed to be a separate building drain from the sanitary sewer, I have seen literal shit and toilet paper backup into an interceptor because of a stoppage downstream. Fucking nasty. Any plumber will tell you that a grease interceptor smells worse than raw sewage.

On the subject of high chinese IQ I think some areas in china do have high IQs. Singapore which is full of chinese immigrants has an IQ of 108. There may be some regions and some minority groups that may have substantially lower IQs though. Theres lots of IQ variation in europe and I assume that to be the case in china too, even among Han populations. I wouldnt underestimate the intelligence of chinks though.
