Even in the oven or the slow cooker too, getting the connective tissue to soemthing like 190F is required for tenderness. If not, you must cut against the grain like fajitas .... but that's not how ribs work. Temperature is the significant detail, not time. But there are limits on time: too fast and you'll dry it out, too slow and you're wasting time.
