They're upright wings, not kites. They don't need to catch the wind from behind. In fact, sails are more effective when it comes from the side or front. You can sail almost directly into the wind, with a very small dead zone which can be avoided with a tight zig-zag pattern. You can adjust them for fair weather and stormy conditions. The masts can transfer the load more evenly across the hull. The keel helps cut a channel through the water and stabilizes the ship. Sailing ships are beautiful feats of human ingenuity and engineering.

As an aside, a kite and a hydrofoil, with no displacement hull, connected only in tension could possibly be the fastest thing on the water. All that's needed is a flow gradient to exist between water and air. The RC speed record of 548 mph is currently held by a glider that used only the wind gradient on the lee side of a hill. Dynamic soaring is merely flying in a circuitous path to alternate between acting as keel and sail, where momentum alone carries the energy from the sail to the keel and vice versa. It is theoretically possible to dynamically soar between air and water, however the density ratio of the two fluids (about 800:1) makes engineering such a craft inconceivable in practice. However two separate foilcraft, one for water and one for air connected in tension, is doable. It might be a good project for a smart kid interested in control theory and stability augmentation.
