Everything is catered, and if certain production/crew members don't get what they requested that day (gluten free, vegan, keto, paleo, etc), they may just start bitching and reduce their performance. A handsome portion of that $200M went to food. Food that had to be prepared (including special requests), temperature controlled, and delivered. Those in the Hollywood film industry are weak and overpaid.

Well to a certain degree I get it with the food.

If you have a rip top athlet playing a part, well those guys need a specific diet to be what you hired them for.

I'd assume that the movie version is designed to look that way for how it captures on camera and shows features, how it meshes with all the other costumes.

Perhaps it will look good post-production. The way the dress looks matches the original movie, and Shrek, exactly. The live-action costumes don't typically have an exact match, but we'll see how it turns out.
