Here's a quick tier list for newcomers, from worst to best.

E - Soybean oil
D - Linseed oil
C - Other seed oils
B - Coconut, avocado oil♤
A - Olive oil
S - Animal tallow

♤ - Avocado oil is very commonly counterfeited and has a different nutritional profile than coconut. Its not better nor worse than coconut, but you'll have to take care with who you buy your stuff from.

More stable, AKA oxidizes slower over time when stored. Also has better digestability and blends better with protein. Coconut oil can be described as not good, but not terrible, as it oxidizes slower than seed oils and has more saturated fat, but will require chemical stabilizers to not go bad, something olive oil does not need, or only a small fraction.

Here's my thoughts on olive oil: the worst olive oil will not flush your intestines and cause inflammation by its huge amount of insaturated fat and make you a zombie by having to fight the side effects of it. That's seed oils for you. Coconut and avocado do the same thing, but are more stable, hence they do not inflammate you as much. Olive oil is the most stable commercial cooking oil today, even the counterfeit shit. It only does not beat tallow because tallow is good for you, and olive oil at worst will not wreck your digestive system.

I’m not sure where you are getting your information from, mate, but it’s incorrect.

The fact that olive oil is mostly mufa and pufa, and coconut oil is mostly sfa makes olive oil less stable by default. That’s just a chemical fact.

From cooking perspective itself, the smoking point of olive oil is much lower than coconut oil and tallow and even avocado oil. Any olive oil they sell for sautéing and frying is cut with other oils, often soybean.

So in comparison coconut oil (and palm oil) wins for both stability on shelf and high temperatures. However, coconut oil does have some histamines which some people react to. I also hate the smell.

This is not to mention that tallow obviously wipes the floor with all other fats and oils.

There’s a burgeoning body of evidence that mufa in olive oil is especially fattening. You have to dig up research on Spain and Italy vs France. Spain and Italy used to cook with only lard but now they cook primarily with olive oil, whereaa France has always been big on butter. In various studies, France comes out the best in terms of various diseases. Unfortunately, more recently France has also started using seed and olive oils.

In conclusion, you can have your extra virgin olive oil raw and cold occasionally. You must cook with tallow or alternatively coconut/palm oil

The primary health problems with seed oils is extreme oxidation. Avocado oil is more succeptible to that, especially under light.

Avocado oil is also 50% more concentrated with phytosterols, which are androgenic and make you grow tits due to replacing healthy colestherol in your body that is the primary compound for testosterone synthesis.

Granted, its still less than other seed oils, so Ill keep the tiers.

I can’t disagree with you re avocado oil without more research but I am inclined to believe you. Although most avocado oil comes packaged in dark opaque bottles.
My point was olive oil ranks lower than coconut oil and palm oil when it comes to cooking with it.

There are great studies comparing them all and its amazing just how well olive oil performs. Mediterranean cuisine uses it a lot for a reason, despite also having reasonable access to tallow. Also check saturated fats; avocado oil has unsaturated fat as its main component, whole coconut oil is mostly saturated.

I don’t understand where the confusion is stemming from. I’m not defending avocado oil. I don’t even put it in the same category as coconut oil. All I’m saying is coconut oil as being mostly sfa is more stable for cooking than olive oil.

Re medis using olive oil, traditionally they mostly used it for salads and dips. The past century has seen them using it for cooking more and more. If you look at the countries that use olive oil the most, it’s Spain and Italy and some North Africa. These countries are easily beaten by France for doing better in all diseases and longevity. France has never used oil in cooking until recently.
Personally, on my travels I noticed Italians and Spanish age badly and get fat and slow. The French look lean and sharp in their 80s. Milanese are an exception to Italy as they age similarly to the French. They also eat very similarly to the French. And guess what fat they eat? Butter, lard, not olive oil.

Olive oils are not created equal.

If you want the best. Look for Extra Virgin in a dark glass bottle and preferably one that is harvested recently. It will have more polyphenols. Also the vineyard matters look for a company that tests for polyphenol count.

If you go to the grocery store and look for soy bean oil, you will have a difficult time finding it by looking at the front label alone. You need to look at the ingredient list of "vegetable oil" to find 100% soy bean oil.
Why do they feel the need to hide soy bean oil like that?
