I just made some bomb ass fried rice!

About half a yellow onion, finely chopped
Five or so Mezetta hot peppers, the light green ones, finely chopped.
Half pound of grass fed 90% ground beef (I was gonna do SPAM)
About a cup and a half of cooked, cold, basmati rice.
Medium high on a gas cooktop.
Fresh ground black pepper.
Soy sauce.
Shits fire!

Edit: four cloves of fresh chopped garlic as well.

I like to use egg, bacon and spring onion. Might try adding carrot next time and a good helping of butter.

Fish sauce is made from salted anchovies. Are you sure? I thought oyster sauce was more of a umami flavor.

Those Mezetta mini hot chili peppers is the bomb. I use them in yellow rice. In fact, I eat them raw, put them on sammiches, etc. I'm getting ready to put on a crock pot of 15 bean soup with real good sweet Italian sausage in it and a pan of cornbread. There's a lot of other ingredients and let me know if you want my recipe but smoked paprika is my secret ingredient. Old boomers would do almost anything for my beans. My wife and kids love this too. I also make bitchin' brown beans too. I make beans once or twice a month.

Last week I bought two boxes of that Velveeta double cheeseburger mac and threw some spicy hotdogs in it, a can of diced tomatoes(garlic, herb), half a can of kidney beans and godamn it was good. I've been making that shit since the 80's.

It’s weird how little changes to things make the biggest difference! I just started preheating my stainless steel pan for like 4-5 minutes before I put anything in it. Woah, what a game changer. I only did that with my cast iron stuff before. This is probably cooking 101 but nothing sticks to it anymore!!!

Ooh, I am new, like a year into good clad stainless stuff. I still have my cast iron, but did you know, you can season your stainless like you do cast? Seriously, I just did mine stovetop with coconut oil. It works!
About the only think I will put in a cold pan is bacon. Bacon should always go in a cold pan.
Bacon pisses me off though and Mrs. Icemonkey does it in the oven on a baking rack, so I let her do it.
