Seriously, there are cheap digital meat thermometers that let you monitor the temperature with a digital display outside the oven. You can set a temperature for an alarm.

Look at how the meat pulled up the leg bone. The meat tightened up and squeezed out all the juices. The Sahara has more water per square inch.
