Pigs carry viruses that easily transmit to humans. And typically wild pigs such as you would have encountered if they weren't being raised for food which they wouldn't have been are extremely dangerous animals as well.
Needless to say an animal that's been dead for a while is likely full of bacteria.
I tend to believe that most restrictions come from association with death and disease in the same way most traditional medicines probably come from their use in the past and a noticing of their effectiveness over time.

I've not heard why the various sea foods were disallowed but it's probably for similar reasons.
Catholics used to be prohibited from eating meat on any Friday; now it's just during Lent. Historically I doubt people had meat every single day anyway. I do find it interesting that fish are not considered meat, by the bishops that owned the fisheries.

Nowhere is it said that eating these animals is 'not a good idea', nor is it commonly accepted that these texts were written to include the judgements of men regarding the structure of a society - the argument is that these are proclamations of prohibition from their fucking god.
And make no mistake, the catholic church decided to change rules it found inconvenient - just like their pope is right now - but the source of the prohibition imposed on the catholic never actually changed; if they were forbidden before and they're pious, they still are - church decree be damned.
To be clear, I know these cult texts were written by men, for the purpose of control of men - but the adherent does not. They believe these incoherent books are divine prescription and literal historic truth.

These stories are told after the named gospels predominantly in the book of Acts in one such meeting they discuss an epiphany which came to a believer who saw the prescriptions on food fall away in a dream, or a vision they (early Church fathers) probed his epiphany compared it to Christ's words and actions and found it to be the proper way, this led to a discussion on circumcision and for similar reasons the practice was ended(this is a gross simplification for laymen)
I may be mistaken as these early church meetings bleed together but the same gathering in Antioch was when they decried judaisers who wanted to make the gentile Christians subservient to the hebrew Christians or who wanted to apply the old law of Moses and Abraham onto the Christians despite Christ's sacrifice and explicit simplifications.
None of this is particularly mysterious.
