20H Bone Broth

'Dog bones' + Celery, onion, carrot. And a spice bag filled with star anise, green cardamom, black cardamom, fenugreek, ginger, cumin, black cumin, mace, cubeba, seeds of paradise, black pepper, and tumeric. Pressure cooked 20H at 222F.

Will use it to cook rice.

Its just a frozen bone from a cow, I suppose people give them to their dogs. I don't have a dog.

Butchers sell these frozen bones for cheap. Great for the dogs, better for broth. Make that shit to feel better.

Nice. Some of your spices I am not familiar with. Seems like a lot. Sometimes less is more. How did you know what amounts of each to use? Must be experience? Nice work?

I looked up which spices were used in the middle ages. And I've been experimenting with them in cooking. I've some idea on what works and what doesn't and have discovered pairings and concepts.

Here are my findings:

cubeba is really good in ground beef I will definitely buying more
seeds of paradise is good on meats and other stuff I might buy more its not that special though that's why it was replaced by pepper and pepper is cheaper
green cardamom is excellent in tea and in broths and all sorts of infusions. I will be buying more. I have made a habit of making my morning tea using black tea leaves and green cardamom.
black cardamom I am still trying to find a use for. it certainly does not belong in tea.
both cumins are great in rice or beef or whatever I will be buying more
mace is great in broths i will be buying more
star anise is good in broths and in tea I'll probably buy more but I can go without it
fenugreek raises testosterone and gives a nice aroma I'll buy more

I always find rice made with bone broth comes out mushy.

you probably don't use a rice cooker. you should get one they are cheap and make consistent rice.
