I don't think the seed oils your grandparents had are the same as what we have today.
Not a scientist here but I'm pretty sure what we're getting as "vegetable oil" is far different than what we had even when I was a kid. Not to mention back in your grandparents time.
most modern oils are hydrogenated in some part or another. These kill you quick. All food in the supermarts, all the restaurant food is seeped with them.
OIn top of that, most industrial food oils are seed oils. They inflame the shyt out of you and blast your cardio system and now it looks like they will blow out your liver in the long term.

Yeah, but you're belittling your own point. You said your grandpapi ate seed oils. Now, you're all like "in really nice restaurants" they use olive oil, Well no shit. Olive oil is a decent oil for temps under 425F but it is expensive. So, a nice Italian place or sum shit, is gonna use it to cook stuff, but you're average diner isn't going to use that. They're gonna use palm oil, or canola oil to replace tallow or ghee, which are about the same in cost. There are several decent seed oils that aren't bad, but they are expensive, especially if they are organic, but because they are very exclusive, the average eatery isn't going to use them.
