A firecracker of a thin skinned pepper that clocks in around 20,000 to 40,000 Scoville Heat Units (SHU). For comparison, Jalapeรฑo's are between 2,500 and 8,000 SHU. More cold-hardy than most peppers, the fuzzy stemmed and leaved plant grows to 4 feet, and can live up to 20 years.

Pods grow upright to 2 inches, and go from green to black to red. If you leave the red ones in place, they'll begin to wrinkle as you see in my photo. There's one near the bottom that's still showing some green and black.

This is about half the peppers on one of the plants from seeds that had a slight miscegenation episode, so some of them have plumped out a bit.

Have chopped a bunch of those wrinkles and have them in the skillet with chopped beef, broccoli, and Lion's Mane mushrooms.

๐ŸŒถ If you got pepper seeds from the Great Seed Exchange on old voat, I had them labeled as 'Asian' back then. So update your plant tags.

My dad's coworker gave us some oatmeal raisin walnut cookies and they were awesome, I had to have the recipe, turns out it's on the oat container.

Well, I noticed when I tried the recipe (I've made them 4 times now) that I had a hard time getting the 3 cups of oats to mix entirely with freshly milled wheat.

So, in comes this recipe; a little modification to work better with freshly milled flour.

Ingredients:

Dry:
2 Cups (226g) Soft White Wheat berries (sifted becomes ~195g, if you're not doing freshly milled use this much AP)
1 Cup (111g) Oat Flour
2 Cups (222g) Quick Rolled Oats
1 Cup (123g) Walnuts
1/2 Cup (71g) Raisins
1 1/2 tsp (2g) Cinnamon
1 tsp (5g) Salt
1 tsp (5g) Baking Soda

Wet:
1 Cup (167g) Brown Sugar
1/2 Cup (107g) Cane Sugar
1 Cup Butter
2 Eggs
1 tsp Vanilla Extract

Instructions:

Part 1:
Mill 1 Cup (111g) Oats into oat flour, use this step to tune the stones if using a stone mill.
Mill 2 Cups Soft White Wheat berries and sift the flour, if there is too much loss, grind the siftings and sift again. (I ground the siftings once, yielding a loss of 31g, which gets added to my cream of wheat storage glass.)
Combine both flours.
Sift into flour the 1 tsp Baking Soda. (I find sometimes the Baking Soda can clump and makes for inconsistency.)
Whisk in 1 1/2 tsp Cinnamon, 1 tsp Salt (I sifted in the salt because I'm using a flaky sea salt, what didn't go through I added to the sugar).

Part 2:
Soften 1 Cup Butter and cream into 1 Cup Brown Sugar and 1/2 Cup Cane Sugar.
Whisk in 1 tsp Vanilla Extract and 2 Eggs.
Combine Wet with Dry and mix well until no raw flour is visible.

Part 3:
Combine 2 Cups Oats with 1 Cup Walnuts and 1/2 Cup Raisins and mix well.
Combine this into the batter and mix again.
Portion your preferred size cookie out. (I used an ice cream scoop)

Bake:
@ 375โ„‰ for 10-12 minutes. (I did 11 minutes)

Made 19 with the massive scoop I use.

It has a heck of a crust! And it tastes fantastic!

2 3/4 Cups (350g) Organic Hard White Wheat
1 1/5 Cups (150g) Organic Hard Red Wheat
1 1/5 Cups (150g) Organic Khorasan Wheat
1 Cup (200g) Organic Sourdough Starter
1 1/2 Cups (350g) Water
1/4 Cup (2 oz. or 4 Tablespoons)(53g) Extra Virgin Olive Oil
1/4 Cup (2 oz. or 4 Tablespoons)(53g) Organic Honey
1/2 Tablespoon Rice Bran Extract (optional)
1 1/2 teaspoon Salt

450โ„‰ for 20 minutes then reduced to 350โ„‰ for another 25-35 minutes.

I should add; I let the starter rest on the counter ~8 hours before use.
The rise took about 6 hours, the proof took 2 hours.

EDIT: I have found the recipe needs another 15 minutes at least and have made changes in the recipe to reflect this. Sourdough needs a much hotter internal temp for done-ness. ~200-210โ„‰

This recipe came about by accident. I used the full 2 sticks of butter for a full cup as if I were making the oatmeal cookies, but I was making chocolate chip cookies. So then all of my family told me that they like the extra butter better!

Extra butter it is! And on top of that, They were also saying the cookie itself was better than the chocolate. So here are the Double Butter Sugar Cookies!

Dry:
337g soft wheat flour (I really like using fresh milled White Sonora from Hayden Flour Mills)
1/4 tsp baking soda
3/4 tsp baking powder
1 tsp salt

Wet:
1 cup of compacted brown sugar or approximately 206g
1/4 cup of cane sugar or other fine sugar
1 cup of butter
2 large eggs
1 tsp vanilla extract

@375โ„‰ for 12-14 minutes

These I made today with Arizona Golden Durum flour from Hayden Flour Mills and they came out amazing and delicious!
I added chocolate chips to some to test the difference.
Without the chips is better in my opinion.

4th bloom of the summer. I've had it in a 3 gallon pot for a little over 20 years, and the bloom you see is at 9 feet above the ground. Have a second one in another 3 gallon pot, but that one fell over and broke into several pieces. Am rooting those pieces now. More info and photos about the san pedro cactus at this link.

This is the top tray that's almost full. Worms are 'Red Wigglers'. Rotting food is a mix of various veggies, with crushed eggshells from the duck eggs. If you look closely at the inside lower right, you'll see a baby worm that looks like a tiny white line.

These worms are good at turning your scraps into worm castings, which are a great soil enhancer for your garden. This 'colony' or whatever you call them is a little over 20 years old. You see some pill bugs on the right. Couple weeks ago they were overrunning the place, so I genocided 96% of them by sprinkling 1/4 inch of buggy flour over the whole inside, then misting until it was a gunky trap. They didn't avoid it and most ended up sinking into it like quicksand.

Sometimes people get Soldier Flies (maggots) in a worm bin, and I've had them in the past. They're great at composting too, but not that good in a worm bin, in my experience. They tend to make a gooey swamp-like mess, unlike the worms who leave aerated worm castings behind. See the link below for pics.

Larvae are found in a wide array of locations, mostly in wetlands, damp places in soil, sod, under bark, in animal excrement, and in decaying organic matter. Adults are found near larval habitats."
