Oatmeal Raisin Walnut Cookies! ๐ช

My dad's coworker gave us some oatmeal raisin walnut cookies and they were awesome, I had to have the recipe, turns out it's on the oat container.
Well, I noticed when I tried the recipe (I've made them 4 times now) that I had a hard time getting the 3 cups of oats to mix entirely with freshly milled wheat.
So, in comes this recipe; a little modification to work better with freshly milled flour.
Ingredients:
Dry:
2 Cups (226g) Soft White Wheat berries (sifted becomes ~195g, if you're not doing freshly milled use this much AP)
1 Cup (111g) Oat Flour
2 Cups (222g) Quick Rolled Oats
1 Cup (123g) Walnuts
1/2 Cup (71g) Raisins
1 1/2 tsp (2g) Cinnamon
1 tsp (5g) Salt
1 tsp (5g) Baking Soda
Wet:
1 Cup (167g) Brown Sugar
1/2 Cup (107g) Cane Sugar
1 Cup Butter
2 Eggs
1 tsp Vanilla Extract
Instructions:
Part 1:
Mill 1 Cup (111g) Oats into oat flour, use this step to tune the stones if using a stone mill.
Mill 2 Cups Soft White Wheat berries and sift the flour, if there is too much loss, grind the siftings and sift again. (I ground the siftings once, yielding a loss of 31g, which gets added to my cream of wheat storage glass.)
Combine both flours.
Sift into flour the 1 tsp Baking Soda. (I find sometimes the Baking Soda can clump and makes for inconsistency.)
Whisk in 1 1/2 tsp Cinnamon, 1 tsp Salt (I sifted in the salt because I'm using a flaky sea salt, what didn't go through I added to the sugar).
Part 2:
Soften 1 Cup Butter and cream into 1 Cup Brown Sugar and 1/2 Cup Cane Sugar.
Whisk in 1 tsp Vanilla Extract and 2 Eggs.
Combine Wet with Dry and mix well until no raw flour is visible.
Part 3:
Combine 2 Cups Oats with 1 Cup Walnuts and 1/2 Cup Raisins and mix well.
Combine this into the batter and mix again.
Portion your preferred size cookie out. (I used an ice cream scoop)
Bake:
@ 375โ for 10-12 minutes. (I did 11 minutes)
Made 19 with the massive scoop I use.
